  1. Preheat oven to 375 degrees F, and coat the chicken in the baking mix, and place in a 3-quart oblong casserole dish coated with nonstick cooking spray, and bake for 40 minutes to one hour.
  2. Meanwhile, in a saucepan, mix together the olive oil and garlic, and add the flour, and whisk in the chicken broth, cooking over medium-high heat until thickened, and pour over the chicken, baking covered, for and additional 20 minutes or until chicken is done.
