0 1/2 cup  fresh chopped onion
1 tsp  minced garlic
0 1/4 cup  low sodium soy sauce
0 1/4 cup  cider vinegar
0 1/4 cup  tomato paste
0 1/2 cup  apple cider
2 tbsp  prepared yellow mustard
2 tbsp  molasses
3 piece  raw bacon slices
0 1/2 tsp  ground thyme
0 1/2 tsp  black pepper
Directions
  1. In blender or food processor, combine all ingredients, except bacon. Purée until smooth.
  2. Transfer to small saucepan. Add bacon, and simmer, uncovered, 10 to 15 minutes, stirring often, until thickened.
  3. Remove from heat, cover, and let stand 30 minutes. Discard bacon. Store in airtight container up to 2 weeks in refrigerator.
