1 tbsp  margarine
0 1/2 cup  sour cream
0 1/4 cup  fresh chopped onion
0 1/2 cup  fresh chopped celery
0 1/4 cup  chopped carrots
0 1/4 each  chopped green bell peppers
6 cup  beef broth
16 oz  fresh shredded cabbage
1 pinch  black pepper
1 pinch  salt
0 1/4 tsp  ground nutmeg
  1. In large saucepan, melt margarine over medium heat. Add the onions, celery, carrots, and peppers.
  2. Stir over medium heat for about 4 minutes.
  3. Add broth to vegetables. Cover and simmer for 15 minutes.
  4. Add cabbage, and salt, pepper and nutmeg to taste. Cover and let simmer for another 5 minutes. Ladle into soup bowls and garnish with dollop of sour cream, if desired. Serve hot.
