1 tbsp  margarine
0 1/4 cup  low sodium vegetable broth
2 lb  baby carrots
1 cup  low sugar orange marmalade
1 pinch  salt and pepper
2 tbsp  chopped parsley
  1. Use a large saucepan, and bring the margarine and broth to a boil, add the carrots and cook, covered, over medium heat for 10 to 20 minutes, or until crisp-tender.
  2. Uncover, and stir in the marmalade. Cook, stirring, over low heat until the liquid has reduced to a glaze, 3 to 5 minutes, and season with the salt and pepper.
  3. Sprinkle with the parsley before serving.
