0 1/2 lb  fresh green beans
0 1/2 each  medium red bell peppers
1 each  whole jalapeno pepper
1 each  medium garlic cloves
1 each  bay leaves
1 cup  white wine vinegar
1 cup  cold water
0 1/2 cup  white wine
1 tbsp  sugar
1 tbsp  salt
1 tbsp  coriander seeds
1 tbsp  mustard seed
1 tbsp  black peppercorns
  1. Wash off the green beans and remove stem ends, then place them in a glass dish that is just large enough for the green beans and 2 1/2 cups liquid to fit in and add bell pepper strips if desired.
  2. Take the jalapeƱo, garlic, and bay leaf and tuck between the green beans.
  3. In a medium saucepan add together the remaining ingredients and heat the saucepan until ingredients brought to boil, stirring until sugar and salt dissolve.
  4. Reduce the heat and allow mixture to simmer 5 minutes, then pour mixture over green beans so that they are submerged in liquid, adding additional hot water to cover if not submerged.
  5. Cover and refrigerate green beans for at least 24 hours, then remove and discard bay leaf before serving.
  6. In 48 hours the flavor of the beans improve and they may be kept in the refrigerator for up to 5 days.
