2 tsp  olive oil
1 cup  fresh chopped onion
4 each  medium garlic cloves
0 1/4 tsp  hot red pepper flakes
6 cup  kale, chopped
1 1/4 lb  small potatoes
32 floz  low fat unsalted chicken broth
0 1/4 cup  grated Parmesan cheese
1 pinch  black pepper
Directions
  1. Heat oil in a Dutch oven over medium heat until hot. Add onion; cook 5 minutes or until tender, stirring often. Add garlic and red pepper; cook 1 minute, continue stirring. Add kale, cook 2 minutes or until wilted, stirring occasionally.
  2. Add potato and chicken broth; bring to a boil. Cover, reduce heat and simmer 20 minutes or until potato is tender.
  3. Ladle soup into individual bowls; sprinkle with cheese and black pepper.
