1 cup  cold water
1 lb  Carrots, fresh, baby, medium
2 tbsp  balsamic vinegar
2 tsp  honey
1 tsp  olive oil
0 1/2 tsp  dijon mustard
1 tsp  dried basil
0.125 tsp  black pepper
  1. In large saucepan, bring water to a boil. Add carrots, cover, reduce heat, and simmer 10 minutes or until tender.
  2. Drain carrots and return to saucepan.
  3. In small bowl, whisk vinegar, honey, olive oil, dijon mustard, basil, and black pepper.
  4. Add dressing to carrots. Cook over medium-low heat 2 minutes, stirring often.
  5. Serve warm.
