Ingredients Directions
  1. Coat a large nonstick skillet with cooking spray. Place over medium heat until hot. Add sausage, and cook until browned, stirring until it crumbles.
  2. Drain and pat dry with paper towels. Set sausage aside. Wipe drippings from skillet with a paper towel.
  3. Coat skillet with cooking spray, place over medium high heat until hot.
  4. Add green onions, pepper, and potato. Cook, stirring frequently, 5 minutes or until green onions are tender.
  5. Add cooked sausage, stir well.
  6. Combine egg substitute and dressing mix, pour over vegetable mixture in skillet.
  7. Cover and cook over medium low heat 12-13 minutes or until set.
  8. Sprinkle with cheese. Cover and cook 2 minutes or until cheese melts. Cut into 6 wedges, serve immediately.
