1 each  cooking spray
2 tsp  margarine
1 each  whole chicken, raw
1 lb  small potatoes
2 each  medium garlic cloves
0 1/2 cup  fresh lemon juice
0 1/4 cup  Broth, chicken, low sodium, canned
2 each  medium zucchini
1 tbsp  fresh tarragon
Directions
  1. Coat a large nonstick skillet with cooking spray, add margarine. Place over medium-high heat until hot. Add chicken and cook 2 minutes on each side or until lightly browned.
  2. Add potatoes, garlic, lemon juice, and broth, bring to a boil. Cover, reduce heat and simmer 15 minutes. Add zucchini and tarragon; cover and simmer 10 additional minutes.
