3 cup  self-rising flour
0 1/2 cup  dried mixed fruit morsels
0 1/4 cup  packed light brown sugar
0 1/4 cup  Coconut, fresh, shredded
1 cup  orange juice
0 1/2 cup  liquid egg substitute
3 tbsp  Margarine, 80% fat, unsalted
0 1/4 tsp  lemon extract
1 each  cooking spray
Directions
  1. Preheat oven to 400 degrees F.
  2. In a large bowl combine self-rising flour, fruit, brown sugar, and coconut; make a well in center of mixture.
  3. Combine orange juice, egg substitute, margarine, and lemon extract; add to dry ingredients, stirring just until dry ingredients are moistened.
  4. Spoon batter into muffin pans coated with cooking spray, filling two-thirds full.
  5. Bake for 20 to 25 minutes or until golden. Remove muffins from pans immediately.
