Ingredients Directions
  1. Cut the meat into 1 inch cubes. Coat a large, heavy pot with nonstick cooking spray and cook the meat over medium high heat until browned, stirring often.
  2. Add the onion, celery, bay leaf, parsley, and water, and bring to a boil, lower heat, and simmer, covered, for 45 minutes.
  3. Add the vegetable juice, broth, potato, and barley. Return to a boil, lower the heat, and cover, cooking for 30 minutes.
  4. Add the carrot and mixed vegetables, cover, and continue to cook over low heat for 30 minutes, or until the meat is tender and the barley is done. Remove the bay leaf before serving.
