1 1/2 cup  white all purpose flour
0 1/2 tsp  baking soda
0 1/4 tsp  salt
0 1/2 cup  sugar
0 1/2 tsp  ground cinnamon
1 each  egg whites
1 cup  frozen unsweetened strawberries
2 tbsp  vegetable oil
0.3333 cup  chopped pecans
1 each  cooking spray
  1. In a large bowl, combine the first 5 ingredients and mix well.
  2. Combine egg white, strawberries, and oil, stirring well. Add to flour mixture, stirring just until dry ingredients are moistened.
  3. Stir in pecans.
  4. Spoon batter into a 7 1/2 x 3- x2-inch loaf pan coated with cooking spray. Bake at 350 degrees for 1 hour or until a wooden pick inserted in center comes out clean. Cool in pan 10 minutes. Remove from pan, and let cool completely on a wire rack.
