Ingredients

2 each  medium zucchini
1 each  red onion
1 each  medium garlic cloves
1 each  medium red bell peppers
8 oz  Pasta, linguine, refrigerated
1 tbsp  balsamic vinegar
2 tbsp  olive oil
1 tsp  black pepper
0 1/2 tsp  oregano leaves
2 tbsp  chopped parsley
0 1/2 tsp  salt
1 each  medium tomatoes
1 each  cooking spray
Directions
  1. Coat grill with cooking spray, and preheat for 5 minutes.
  2. Place the zucchini, onion, garlic, and red pepper on the grill, and cook for 6-8 minutes.
  3. In a large serving bowl, combine the grilled vegetables and cooked linguine.
  4. In a small bowl, combine the vinegar, oil, black pepper, oregano, Italian parsley, and salt to make the dressing.
  5. Pour the dressing over the linguine and vegetables, toss and garnish with the chopped tomato.
