Ingredients Directions
  1. Coat the grill with cooking spray and preheat for 5 minutes.
  2. Place the peppers, eggplant, onion, and garlic in the grill and cook for 6-8 minutes.
  3. In a large bowl combine the grilled vegetables, chopped tomato, and fettucini noodles.
  4. Mix together the oil, vinegar, Italian seasoning, parsley, salt, rosemary, and black pepper to make the salad dressing.
  5. Pour the dressing over the salad and toss gently.
