1 cup  Yogurt, plain, nonfat
2 tsp  fresh lemon juice
2 tsp  honey
1 tsp  dijon mustard
2 each  medium peaches
1 each  medium celery stalks
2 tsp  sesame seeds
1 tbsp  chopped parsley
1 tbsp  fresh cilantro
2 tbsp  minced onion
4 each  dried apricots
Directions
  1. In a small bowl or measuring cup, combine the yogurt, lemon juice, honey, and mustard.
  2. Toss together the peaches, celery, sesame seeds, parsley, cilantro, onions, and apricots in a large mixing bowl. Add the yogurt mixture and toss again. Chill for at least 3 hours before serving.
