1 each  whole eggplant
1 tsp  black pepper
8 oz  no-salt tomato sauce
0 1/2 cup  chopped tomato
1 tbsp  garlic cloves, chopped
1 tbsp  chopped parsley
1 tsp  black pepper
0 1/2 tsp  salt
2 tbsp  Cheese, asiago, fresh, shredded
1 each  cooking spray
Directions
  1. Clean, peel, and cut eggplant into 1/2" thick slices. Sprinkle with pepper. Set aside.
  2. In small saucepan over low heat, combine tomato sauce, tomato, garlic, parsley, pepper, and salt. Heat through and simmer 10 minutes.
  3. Coat grill with cooking spray, preheat 5 minutes at medium.
  4. Place eggplant slices on grill in single layer and cook until tender, 8 -9 minutes.
  5. Remove from grill, top with tomato sauce mixture and cheese.
