1 1/2 tsp  lime peel zest
3 tbsp  fresh lime juice
4 tsp  fresh ginger root
1 tsp  Chinese 5-spice powder
0 1/2 tsp  sugar
0 1/2 tsp  salt
1 pinch  black pepper
2 tsp  vegetable oil
1 lb  salmon steaks
8 oz  fresh baby spinach
1/2 tsp  minced garlic
  1. In 2-quart dish, whisk lime zest, lime juice, ginger, 5-spice powder, sugar, salt, pepper, and oil.
  2. Add salmon to marinade. Turn to coat.
  3. Cover and refrigerate for 2-3 hours.
  4. In 3-quart microwave safe dish combine spinach and garlic. Toss.
  5. Cover and microwave on high (100% power) for 2 minutes or until the spinach has wilted.
  6. Drain, set aside and keep warm.
  7. Preheat grill to medium-high.
  8. Remove salmon from marinade and place on grill. Discard marinade.
  9. Grill for 4 minutes per side until internal temperature reaches 145°F.
  10. Divide spinach evenly onto 4 plates. Top with salmon. Serve.
