1 lb  boneless skinless chicken breasts
1 each  cooking spray
4 tbsp  fresh lime juice
0 1/2 cup  fresh cilantro
0.3333 cup  fresh chopped green onion
0 1/4 each  whole jalapeno pepper
1 oz  pine nuts
0 1/4 tsp  black pepper
Directions
  1. Dice onion and cilantro. Remove seeds and dice jalapeño pepper.
  2. In small bowl, combine 2 tablespoons of lime juice, cilantro, onions, jalapeño pepper, and pine nuts. Stir and set aside.
  3. Preheat broiler.
  4. Spray baking sheet or broiler pan with cooking spray.
  5. Place chicken on baking sheet or broiler pan.
  6. Brush chicken breasts with remaining 2 tablespoon of lime juice. Sprinkle generously with pepper.
  7. Broil chicken 1-2" from heat for 8-10 minutes until internal temperature reaches 165°F. Serve with cilantro salsa.
