4 cup  Cheese, ricotta, partially skim
3 each  eggs
2 tbsp  honey
0 1/4 cup  sweetener (sugar substitute)
3 tbsp  cornstarch
1 tbsp  vanilla extract
0.3333 cup  Cracker Crumbs, graham, plain
1 each  cooking spray
Directions
  1. Preheat the oven to 350 F.
  2. In a large bowl, beat the cheese until smooth.
  3. Stir in the egg yolks, honey, sugar substitute, cornstarch, and vanilla extract, mixing until thoroughly combined.
  4. In a medium bowl, whip the egg whites with clean beaters for 2 minutes, or until soft peaks form.
  5. Fold the whites into the cheese mixture.
  6. Coat a 9" springform pan with cooking spray and cover the bottom with the cookie crumbs. Pour the cheese mixture into the pan.
  7. Bake for 30-40 minutes, or until golden and set.
