Ingredients Directions
  1. Preheat the oven to 400 degrees F.
  2. Rinse chicken with cool water, pat dry, and place in a shallow nonmetal dish.
  3. Pour the buttermilk or yogurt over the chicken and turn the pieces to cover fully.
  4. Cover and refrigerate for 6 to 24 hours.
  5. Blend the cornflakes in a blender or food processor, and put in a gallon-sized plastic bag with the remaining coating ingredients. Close the bag and shake well to mix.
  6. Place 2 pieces of the chicken in the bag, and shake well to coat evenly. Repeat this process with all of the chicken.
  7. Place the chicken on a baking sheet sprayed with nonstick cooking spray. Lightly spray each piece of chicken as well.
  8. Bake for 50 minutes.
