0 1/4 cup  chopped parsley
3 tbsp  fresh lemon juice
2 tbsp  extra virgin olive oil
3 each  medium garlic cloves
1 tsp  italian seasoning
0 1/2 tsp  black pepper
0 1/2 tsp  salt
10 oz  flame roasted red bell peppers, 80% cooked
6 oz  fresh portobello mushroom
1 each  red onion
  1. Coat grill rack with cooking spray. Preheat grill to medium-high.
  2. In large bowl, combine parsley, lemon juice, oil, garlic, Italian seasoning, black pepper, and salt.
  3. Add peppers, mushrooms, and onion. Toss to coat well. (The mixture can be prepared ahead to this point and refrigerated for up to 2 days.)
  4. Place vegetable basket or grill screen on grill rack, place vegetables on basket or screen. Place on grill.
  5. Grill, turning often, 15 minutes or until mushrooms tender and lightly charred.
