0 1/2 lb  firm tofu
1 each  large tomato
0 1/4 cup  extra virgin olive oil
1 each  medium garlic cloves
2 tbsp  chopped parsley
1 each  Chile Peppers, green, whole
1 tsp  red wine vinegar
0 1/4 tsp  sweetener (sugar substitute)
  1. Place the tofu in a single layer, in a shallow dish.
  2. In a small bowl, combine tomato, oil, garlic, parsley, chile pepper, vinegar, and sugar substitute. Whisk to blend.
  3. Spoon the salsa mixture over the tofu, and allow to marinate for 30 minutes.
  4. Serve 2 slices of tofu per plate, topped with the salsa.
