6 oz  long grain brown rice
2 lb  Pork, tenderloin, lean, raw
1 pinch  salt and pepper
2 tbsp  margarine
0 1/4 cup  fresh lemon juice
2 tbsp  Worcestershire sauce
1 tbsp  dijon mustard
1 tbsp  chopped parsley
  1. Cook the wild rice according to package instructions, omitting any oil and salt.
  2. Sprinkle the pork slices with salt and pepper, heat the margarine in a heavy skillet, and cook the slices 3 to 4 minutes on each side, until browned and cooked through, working in batches if necessary,
  3. Remove to a serving platter, and cover to keep warm.
  4. Add the lemon juice, Worcestershire sauce, and mustard to the skillet, and cook over medium heat, stirring with the pork juices, until heated thoroughly, about 3 minute.
  5. Return the pork to the sauce, and serve the pork and sauce over the rice, sprinkled with the parsley.
