4 each  Artichokes, globe, medium, fresh
8 each  scallions
1 each  medium onions
4 tsp  extra virgin olive oil
1 each  medium lemons
1 each  fresh lemons
0 1/2 cup  cold water
1 pinch  salt
6 tbsp  fresh dill weed
1 each  medium lemons
  1. In a large pan, place the artichokes, scallions, onion, oil, lemon, lemon juice and water. Cover and cook over low heat for 35 minutes.
  2. Add the salt, most of the dill, reserving some dill for garnish. Baste the artichokes and continue to cook for 20 minutes, or until tender.
  3. Allow artichokes to cool, then garnish with the remaining dill. Serve cold with wedges of lemon for garnish.
