Ingredients

1 each  sweet potatoes
1 each  large russet potatoes
1 each  medium onions
0 1/2 tsp  minced garlic
14 1/2 oz  low sodium vegetable broth
1 tsp  ground thyme
0.125 tsp  ground cayenne (red pepper)
12 oz  evaporated skim milk
1 pinch  salt and pepper
1 pinch  fresh chopped green onion
Directions
  1. In a large pot, mix the diced sweet potato, potato, onion, garlic, and vegetable broth, and bring to a boil. Reduce the heat and simmer, covered, for 15 minutes, or until the potatoes are tender.
  2. Pour the mixture into a food processor, and blend until smooth. Return to the pot, and add the thyme, cayenne, and evaporated milk, and cook over a low heat just until heated through. Season with salt and pepper. Garnish with green onion, and serve.
