Ingredients Directions
  1. In a large pan, heat the olive oil. Add the celery, leeks, carrots, and garlic and cook for 5 minutes or until softened.
  2. Stir in tomatoes and stock. Bring to boil, cover, and cook gently for 15 minutes.
  3. Stir in the beans and pesto, along with salt and pepper to taste. Heat through for 5 more minutes.
  4. Serve in warm bowls and sprinkle with Parmesan cheese shavings.
