32 oz  Peaches, sliced, frozen
2 tbsp  cornstarch
0.3333 cup  sugar
2 tbsp  fresh lemon juice
5 tbsp  margarine
0.3333 cup  packed light brown sugar
1 tbsp  vanilla extract
0 3/4 cup  white all purpose flour
0 1/4 tsp  baking soda
1 1/2 cup  Oats, rolled, old fashioned
Directions
  1. Preheat oven to 350 degrees F.
  2. Place the fruit in an oblong 2 quart casserole dish.
  3. In a small bowl, mix together the cornstarch and sugar, and toss the cornstarch mixture and lemon juice with the peaches in the casserole dish.
  4. In a medium bowl, combine the margarine, brown sugar, and vanilla.
  5. In a separate small bowl, stir together the flour and baking soda, and mix with the oatmeal and margarine mixture until it is crumbly.
  6. Sprinkle the oatmeal mixture on top of the peaches.
  7. Bake for 45 minutes, or until the topping is brown and the mixture is bubbly. Serve immediately.
