  1. Rinse the dried shrimp under cold running water and drain.
  2. Combine the shrimp with the chicken stock in a large pan and bring to a boil.
  3. Add tofu and simmer for 5 minutes. Season with fish sauce and black pepper to taste.
  4. Tear the spinach into medium size pieces. Add to the soup and cook for 2 minutes.
  5. Serve soup in warmed bowls. Sprinkle the chopped scallions on top to garnish.
