4 cup  fresh broccoli florets
0 1/4 cup  cold water
1 each  cooking spray
1 each  medium onions
0.6667 cup  white all purpose flour
1 1/2 cup  fat free milk
29 floz  low sodium vegetable broth
1 cup  Cheese, colby & monterey jack, reduced fat, shredded
1 pinch  salt and pepper
0.125 tsp  ground thyme
  1. Place the broccoli and water in a microwave-safe dish. Microwave, covered, for 5 to 8 minutes, or until tender. Drain and set aside.
  2. In a large pot coated with nonstick cooking spray, sauté the onion over medium heat until softened, about 3 to 5 minutes.
  3. In a small bowl, combine the flour and milk. Stir the flour and milk mixture into the onion.
  4. Gradually add the vegetable broth and the broccoli. stirring to combine. Cook over medium heat until the mixture comes to a boil, stirring constantly, for 5 minutes or until it is thickened.
  5. Add cheese, thyme, and salt and pepper to taste. Cook and stir just until cheese is melted. Serve hot.
