1 1/2 lb  potatoes, fresh, medium
1 each  large garlic cloves
0 1/4 cup  Sour Cream, light
2 tbsp  fat free milk
2 tsp  fresh rosemary
0 1/4 tsp  salt
0.125 tsp  black pepper
Directions
  1. Preheat oven or toaster oven to 400 degrees F. Cut tip off of garlic cloves, wrap in foil, and roast garlic in oven for about 30 minutes.
  2. In a covered large saucepan cook potatoes in a small amount of boiling water for 20 to 25 minutes or until tender. Drain in a colander; return to saucepan.
  3. Add roasted garlic to potatoes. Mash with a potato masher or an electric mixer on low speed. Add sour cream, milk, rosemary, salt, and pepper. Beat until light and fluffy.
