4 each  medium garlic cloves
1 each  cooking spray
2 tbsp  olive oil
3 each  roma tomatoes
8 oz  fresh cod fillets
0 1/4 tsp  ground oregano
0 1/4 tsp  salt
0.125 tsp  black pepper
  1. Preheat oven to 350 ̊F. Spray an oven-proof skillet with cooking oil spray, pour in ½ tablespoon oil and tilt to coat pan. Heat over medium-high heat, add garlic, and cook, stirring, about 30 seconds, or until golden and slightly softened. Remove pan from heat.
  2. Add tomato, season with half the salt and pepper and toss to combine. Place fish on top of the tomato and season with remaining salt and pepper. Pour remaining oil over fillets. Arrange contents of the pan so that some tomatoes cover cod.
  3. Cover and bake about 20 minutes, uncover, and continue baking 5 to 10 minutes, or until fish is cooked through and no longer pink.
