1 each  sweet potatoes
1 tsp  butter
  1. Preheat oven to 350 ̊F. Roast potato for 1 hour, or until cooked through and a you can pierce with potato with a fork with no resistance.
  2. Remove potato from oven and when cool enough to handle, peel it. Mash with butter. To serve, divide into 2 equal portions.
