1 tsp  ground cumin
1 tsp  paprika, sweet, Hungarian
1 tsp  ground coriander
0 1/2 tsp  salt
0 1/4 tsp  ground cloves
0 1/4 tsp  ground red pepper (cayenne)
3 lb  Lamb, rib, lean, raw, choice, 1/4" trim
1 each  cooking spray
6 cup  Couscous, cooked
1 tbsp  dried currants
  1. Mix together the cumin, paprika, coriander, salt, ground cloves, and ground red pepper.
  2. Rub spices over the lamb and let sit for 5 minutes.
  3. Coat the rack of a broiler pan with cooking spray and arrange the lamb on the rack.
  4. Bake for 25 minutes at 425 degrees F. Allow the lamb to sit for 10 minutes before slicing.
  5. Mix the currants into the couscous.
  6. Serve each plate with 3/4 cup couscous topped with 2 rib chops.
