Ingredients

1 tbsp  canola oil
1 each  medium onions
2 lb  medium tomatoes
16 floz  low fat unsalted chicken broth
2 each  cilantro sprigs
1 pinch  salt
1 pinch  black pepper
Directions
  1. Heat oil in large pan and fry the onion for 5 minutes until it is soft, not brown.
  2. Add the chopped tomatoes, chicken stock, and cilantro to the pan, bring to boil, then lower heat, cover pan and simmer for 15 minutes or until tomatoes are soft.
  3. Remove and discard the cilantro. Place soup through a strainer and return to clean pan.
  4. Season and heat through.
  5. When serving, sprinkle with coarsely ground pepper
