16 oz  fresh broccoli florets
1 pinch  salt and pepper
0.3333 cup  fresh chopped onion
2 oz  pitted calamata olives
0 1/2 cup  balsamic vinegar
1 tbsp  olive oil
0 1/2 cup  part skim shredded mozzarella
  1. Lay the broccoli in a 10-inch microwave-safe dish. Add salt and pepper to taste, and sprinkle with the onion, olives, vinegar, and oil, and microwave for 8 minutes, or until broccoli is tender.
  2. Immediately sprinkle the broccoli with cheese, and serve when the cheese has melted.
