Ingredients Directions
  1. Cook pasta according to package directions and drain.
  2. Return pasta to saucepan; cover and keep warm.
  3. Meanwhile, cut sausage lengthwise into quarters, then into 1/4-inch pieces.
  4. In a large skillet, cook leek and garlic in hot oil until tender.
  5. Stir in sausage pieces, broth, and roasted peppers. Bring to boiling; reduce heat.
  6. Add arugula and cook for 1 to 2 minutes, or just until arugula is wilted.
  7. Add the sausage mixture, basil, Parmesan cheese, and black pepper to cooked pasta and toss gently to combine.
