1 1/4 cup  Flour, pastry, whole wheat, stone ground
1 1/4 cup  whole milk
3 each  eggs
3 tbsp  unsalted butter
0 1/4 tsp  salt
  1. Place oven rack in lower position and preheat oven to 450°F.
  2. Divide butter and melt 2 tablespoons. Cut remaining tablespoon into 8 tiny pieces. Set aside.
  3. In blender, add flour, milk, eggs, melted butter, and salt. Blend until smooth.
  4. Place popover or jumbo muffin pan in oven for 2 minutes.
  5. Remove pan from oven and place one tiny piece of reserved butter into each cup.
  6. Return pan to oven for an additional minute, or until butter melts.
  7. Remove pan from oven. Fill each cup halfway with batter and bake 20 minutes. DO NOT OPEN OVEN.
  8. Reduce temperature to 350°F and bake additional 10 minutes. DO NOT OPEN OVEN.
  9. Remove popovers from pan, place on wire cooling rack. With sharp kniffe, cut small slit in top of each popover to release steam. Cool slightly. Serve warm.
