1 tbsp  olive oil
4 each  boneless skinless chicken breasts
0 1/4 cup  fresh chopped onion
1 cup  Soy Milk, plain
1 tbsp  dijon mustard
0 1/2 tsp  salt
1 1/2 tsp  fresh lemon juice
0 3/4 tsp  cornstarch
2 tbsp  Sour Cream
1 tbsp  fresh dill weed
1 pinch  black pepper
Directions
  1. Cook the chicken and onion in the oil in a large skillet until chicken is golden brown, then stir in the soy milk.
  2. Cover and let cook over medium low heat for about ten minutes.
  3. Take the chicken out and keep warm.
  4. Whisk in the mustard and salt to the soy milk and cook until it bubbles.
  5. In a cup, whisk together lemon juice and cornstarch and then stir into the soy milk.
  6. Add the sour cream, dill, and pepper and stir constantly until smooth without bringing the mixture to a boil.
  7. Put the chicken back in and let it cook with the mixture for about 2 minutes.
