Ingredients Directions
  1. Put the undrained apricots and water in a blender, cover, and process on high for 15 seconds.
  2. Combine 1 1/2 cups blended apricot mixture and chopped dried apricots in a saucepan and bring to a boil.
  3. Stir in the uncooked rice, cover, remove from heat, and let set.
  4. Meanwhile, combine the dry pudding mix, dry milk powder, and remaining 1 1/2 cups apricot mixture in a separate saucepan.
  5. Cook over medium heat until mixture begins to boil and thicken. Stir constantly.
  6. Remove from heat, and stir in nutmeg and rum extract.
  7. Mix in the rice mixture and spoon into 6 dessert dishes.
