Ingredients Directions
  1. Preheat the oven to 375 degrees F.
  2. Brown the meat, garlic, onion, and green pepper in a skillet sprayed with olive oil flavored cooking spray.
  3. Mix in the salsa, chili seasoning, tomato sauce, ketchup, corn, rice, and 1/4 cup Cheddar cheese.
  4. Pour this mixture into a greased 8-by-8-inch baking dish and sprinkle the remaining 1/2 cup Cheddar cheese over the top.
  5. Bake for 20 minutes, remove from oven, and let set for 5 minutes.
  6. Divide into 6 servings and serve!
