  1. In slow cooker, spread lentils on bottom. Top with green beans, cauliflower, onion, and carrots.
  2. In large bowl, combine broth, cumin, and ginger, mix well. Pour over vegetables.
  3. Cover and cook on low heat setting for 9 to 11 hours.
  4. Stir in tomato sauce, cover, and cook on low heat setting for last 10 minutes.
  5. Ladle stew into bowls and sprinkle with peanuts.
