0 1/4 cup  chopped walnuts
1 1/2 cup  dried lentils
4 each  fresh green onions
3 tbsp  balsamic vinegar
2 tbsp  chopped parsley
1 tbsp  olive oil
0 3/4 tsp  salt
0 1/2 tsp  ground thyme
0 1/4 tsp  black pepper
  1. On a baking sheet spread the walnuts in an even later and bake them for 5 minutes or until they become lightly browned, then cool them completely on a baking sheet and set aside.
  2. In a large saucepan combine 2 quarts of water and the lentils and bring the mixture to a boil over high heat, then cover and reduce the heat to medium low.
  3. Simmer the mixture for 30 minutes or until the lentils have become tender stirring them occasionally, then drain and discard the liquid.
  4. In a large bowl mix together the lentils, onions, vinegar, parsley, oil, salt, thyme and pepper, cover and refrigerate for 1 hour or until the mixture is cool.
  5. If desired serve the mixture over lettuce leaves and top the salad with toasted walnuts just before serving.
