  1. In a medium bowl place all of the ingredients except for the cheese and 1 tablespoon onion.
  2. Toss ingredients gently until combined. Let stand for 15 minutes to blend flavors.
  3. Just before serving, gently fold in all but 2 tablespoons of cheese, then top with the remaining cheese and onion.
