1 tbsp  peanut oil
2 lb  boneless skinless chicken breasts
4 oz  scallions
0 1/2 tsp  minced garlic
1 tbsp  cornstarch
0 1/4 tsp  ground ginger
1 pinch  ground cayenne (red pepper)
1 1/4 cup  fat free reduced sodium chicken broth
2 oz  honey
0 1/4 cup  low sodium soy sauce
0 1/2 lb  fresh mushroom slices
0.3333 cup  dry roasted unsalted peanuts
Directions
  1. Heat oil in a wok or large skillet, and add the chicken.
  2. Brown over medium-high heat for about 7-10 minutes.
  3. Add scallions, garlic, cornstarch, ginger, cayenne, chicken broth, honey, soy sauce, and mushrooms.
  4. Cook, stirring constantly, until thickened.
  5. Cover and cook over low heat, 15 to 20 minutes.
  6. Sprinkle with peanuts and serve.
