1 each  whole roasting chicken, without skin
1 tsp  salt
2 tsp  fresh chives
3 tsp  ground thyme
1 tbsp  canola oil
1 each  medium onions
2 each  medium garlic cloves
1 tbsp  curry powder
0 1/2 cup  cold water
1 each  medium apples
Directions
  1. Rinse and cut chicken into serving pieces.
  2. In small bowl, mix salt, chives, and thyme. Dredge chicken though spices.
  3. In large skillet, heat the oil over medium. Brown each piece of chicken for 5 minutes.
  4. Add garlic and onion, and cook 20 minutes.
  5. In small bowl, mix curry powder and water. Add to chicken.
  6. Add apples and enough water to cover chicken. Cook until chicken is tender, about 20 minutes.
