2 tbsp  white all purpose flour
0 1/4 tsp  cajun seasoning
1 pinch  salt
1 pinch  black pepper
1 1/2 lb  boneless pork chops
2 tbsp  canola oil
10 oz  frozen white pearl onions
1 each  medium garlic cloves
10 oz  frozen chopped green peppers
10 oz  medium celery stalks
15 oz  canned stewed tomatoes
2 oz  bay leaf
0 1/2 cup  cold water
0 1/2 tsp  oregano leaves
0 1/2 tsp  ground thyme
Directions
  1. In plastic bag, combine flour, Cajun seasoning, salt, and pepper to taste. Add pork chops and coat thoroughly.
  2. In large skillet, over medium, heat oil, add pork chops, cook until brown.
  3. Remove chops, set aside.
  4. In same skillet, sauté onion, garlic, bell pepper, and celery 10 minutes. Add remaining ingredients and mix well.
  5. Place pork chops back into skillet and simmer until tender, about 3 minutes.
