0 1/4 cup  margarine
0 3/4 cup  sugar
1 each  eggs
2 each  fresh mango
1 tsp  vanilla extract
2 tbsp  fresh lime juice
1 1/2 cup  white all purpose flour
1 1/2 tsp  low sodium baking powder
0 1/4 tsp  baking soda
0 1/2 tsp  ground cinnamon
0 1/2 cup  chopped walnuts
  1. Peel, slice, and puree in a blender or food processor. You should have about 1 cup of puree.
  2. Preheat oven to 350ºF, and coat a 9x5x3-inch loaf pan with nonstick cooking spray.
  3. Use a large mixing bowl, and cream the margarine and sugar, beating well.
  4. Add egg, mango, vanilla, and lime juice.
  5. In a large bowl, mix the flour, baking powder, baking soda, and cinnamon.
  6. Add the mango mixture to the flour mixture, stirring just until the dry ingredients are moistened.
  7. Stir in the walnuts.
  8. Pour the batter into the prepared loaf pan. Bake for 40 minutes, or until a toothpick inserted in the center comes out clean.
  9. Let cool in the pan for 10 minutes before serving.
