Ingredients Directions
  1. Drain and rinse beans. Remove seeds and chop red, green, and yellow bell peppers. Remove seeds and mince jalapeño pepper.
  2. In large bowl, toss beans, all peppers, onion, cilantro, and jalapeño pepper.
  3. In small bowl, whisk lemon juice, olive oil, and garlic. Add salt and black pepper to taste.
  4. Pour dressing over bean mixture. Stir to coat evenly.
  5. Cover and refrigerate for 2 to 24 hours.
