3 tbsp  olive oil
1 lb  sweet potatoes
1 lb  potatoes, fresh, medium
4 each  medium garlic cloves
0 1/4 cup  chopped parsley
1 tsp  ground thyme
0 1/2 tsp  black pepper
1 pinch  salt
Directions
  1. Preheat the oven to 450 degrees F.
  2. In a large roasting pan, mix the oil with the potatoes and whole cloves of garlic. Toss to coat.
  3. Bake, shaking the pan every 15 minutes, until potatoes are browned and crisp and the garlic is soft, about 45 minute to 1 hour.
  4. Take out the garlic, press the softened cloves, and slip from the skins, discarding the skin. Toss the potatoes with the garlic, parsley, thyme, pepper, and salt.
