2 cup  fresh green peas
1 each  fresh green onions
6 cup  fresh chopped arugula
4 cup  chopped swiss chard
0 1/4 cup  balsamic vinegar
0 1/4 cup  extra virgin olive oil
1 pinch  salt and pepper
Directions
  1. In medium saucepan, bring 2 cups of water to boil. Add peas, cook 3 minutes. Drain and cool.
  2. On a large platter, arrange peas, green onions, arugula, and swiss chard in rows.
  3. In screw-top jar, combine vinegar, olive oil, salt, and pepper. Cover and shake well. Drizzle over salad.
  4. Store any remaining dressing in refrigerator.
